Lazio – Food
Lazio cuisine is characterized by simple but tasty dishes.
The most popular main courses are: bucatini “all’amatriciana”, a sauce made with tomato sauce, pork cheek and pecorino cheese, semolina gnocchi “alla romana” (Roman-style gnocchi), spaghetti “alla puttanesca” with olives and cappers and spaghetti alla Carbonara with eggs, bacon and Pecorino cheese.
Among the meat dishes the famous abbacchio “alla cacciatora” lamb stew cooked in the oven and flavored with rosemary, white wine, anchovies and hot pepper. Another common meat dish is the “trippa alla romana”, tripe prepared with pecorino cheese and mint.
Among the fish dishes, it is worth mentioning the baccalà in guazzetto, codfish covered with flour and cooked in a pan with tomato sauce, anchovies, pine nuts and olives.
Very appreciated vegetables from Lazio are: artichoke (fried ‘alla giudia’) and ‘puntarelle’ with anchovies and garlic.
The extra virgin olive oil ‘di Sabina’ and wild strawberries from Nemi are also typical from this region.
Famous desserts are Maritozzo, a sandwich enriched with pine nuts, raisins and candied orange peel and Pangiallo with walnuts, almonds, hazelnuts, honey and pine nuts.
