Molise – Food
In Molise food is very genuine. Among the regional delicacies, the best known are olive oil and truffles, both white and black.
Homemade pasta is the staple food of Molisan cuisine. Fusilli and cavatelli are traditionally served with vegetables and tasty lamb sauces.
Among the excellent cheese production are worth mentioning: “caciocavallo” in Frosolone, Casacalenda and Agnone, “mozzarella” in Bojano.
As regards salami, the best known are sopressata, capocollo and ventricina, a sausage of lean pork, sweet pepper, red pepper and fennel (very famous the ventricina produced in Montenero di Bisaccia)
In Termoli a famous fish soup is cooked using ten different varieties of fish. As a main course, the “pampanella“, a dish made with pork meat, baked with spices.
Excellent desserts are “caragnoli“, Christmas cakes fried and dipped in honey, “cancelle“, waffles with fennel seeds, and “picillati“, baked ravioli stuffed with black cherry.
